Sandy’s Apple Pie!

Healthy and Delicious!

 

Sandy’s apple pie is a fun project with the kids!  Plenty of apples to peel and cut up, and delicious to eat with Breyer’s Vanilla Ice Cream!

 

 

Ingredients:

 

· 2 tablespoons corn starch

· Granny Smith apples 2.5 lb

· Golden Delicious apples 1.5 lb

· 1 teaspoon each cinnamon and nutmeg to taste

· 4 tablespoons brown sugar

· 3 teaspoons raw sugar

· 1 tablespoon lemon juice

· 1 egg.

Preparation:

 

Step 1:

· Preheat the oven to 400 degrees. 

· Peel, core and slice the apples into 3/8 inch wedges.

· Sprinkle lemon juice onto the apples and use a spoon to toss the apples.

· Sprinkle corn starch so it coats all of the apples.

· Sprinkle cinnamon and nutmeg so it coats all of the apples.

· Sprinkle the brown sugar to coat all of the apples.

 

Step 2:

· Lightly spray a 9 inch pie pan with Canola oil. 

· Spread one pie crust onto the pie pan so it overlaps the edges.

· Densely pack the apples into the pie pan until they mound up. 

· Hold and turn another pie crust to stretch it.  Place this pie crust over the apples. 

· Join the pie crusts together around the edge of the pan.  Use a short fork to mush the pie crusts together at the edges. 

· Make 4 slits at the top of the pie to let the moisture escape during baking. 

· To prepare an egg wash in a separate bowl, lightly beat one egg for about 10 seconds.

· Use a brush to coat the pie crust with the egg wash, but not too thick or you will have scrambled eggs on the top of the pie.  The egg wash will give the pie crust a golden brown hue when it is baked.

· Place the pie on the bottom rack of the oven so the crust cooks for 45 minutes in a 400 degree oven.  Bake until a golden brown. 

· After you take the pie out of the oven, sprinkle raw sugar over the top of the crust.  Let the pie cool.

· Enjoy with vanilla ice cream!

Ingredients for apple pie.

Peel and core apples.  Slice into wedges about 3/8 inch thick.

Sprinkle lemon juice onto the apples.  Then lightly coat the apples with corn starch, brown sugar, cinnamon and nutmeg.

Pack the apples into the pie shell as tightly as you can.

Fill the pie shell with apples until it mounds up a couple of inches over the pie plate.

Cover the apple pie with the second crust.  Crimp the edges together with a small fork.  Lightly brush the egg wash over the second crust.

Bake the pie until it is a golden brown.  The egg wash helps to create this golden brown color.  Sprinkle with raw sugar.  Let cool.  Enjoy with ice cream.
