Mountain Dining In Rack of lamb Eloquent and easy!

The below recipe is simple combination of spices to create an easy to prepare and tasty rack of lamb. Just season the rack of lamb overnight in a zip lock bag in the refrigerator. Sear the rack of lamb on the grill or in a pan, bake the rack of lamb wrapped in aluminum foil in the oven, and enjoy a tasty dish!
Spices for rub:
Vegetables: 1 tsp ground cardamon 1 tsp ground cinnamon 1 tsp ground coriander seed 1 tsp ground cumin 1 tsp Garam Masala fresh black pepper to taste (coarsely ground) garlic powder
Meat: Rack of Lamb (Costco has excellent rack of lamb, about 8 lamb chops for about $15) |

Preparation:
Step 1: · In a bowl, mix the spices together. · Gently rinse the rack of lamb in cold water and pat dry with a paper towel. · Sprinkle the mixed spices on the rack of lamb. · With your fingers gently coat and rub the spices into the rack of lamb. · Place rack of lamb into a plastic zip-lock bag overnight in the refrigerator.
Step 2: · For dinner the next day, remove the rack of lamb from the plastic zip-lock bag. · Preheat the oven to 375 degrees. · Quickly sear the sides of the rack of lamb in a hot fry pan, or on a hot grill. · Cover a baking dish with aluminum foil. · Place the rack of lamb on the aluminum foil, and wrap the boney ends of the rack of lamb with aluminum foil. · Bake the rack of lamb in the 375 degrees oven for about 30 minutes.
